Vegan Pumpkin Bread

This vegan pumpkin bread is moist, flavorful, and perfect for any occasion. Its made with wholesome ingredients and warm spices, making it a delicious treat for breakfast or dessert.

Ingredients:

  • 1 3/4 cups all-purpose flour
  • 1 cup pumpkin puree
  • 3/4 cup brown sugar
  • 1/4 cup maple syrup
  • 1/3 cup vegetable oil
  • 1/4 cup plant-based milk such as almond or soy milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves

Instructions:

Preheat your oven to 350F 175C

Grease a loaf pan with vegan butter or oil

In a large mixing bowl, combine the pumpkin puree, brown sugar, maple syrup, vegetable oil, plant-based milk, and vanilla extract

Mix until well combined

In a separate bowl, sift together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves

Gradually add the dry ingredients to the wet ingredients, mixing until just combined

Be careful not to overmix

Pour the batter into the prepared loaf pan and spread it evenly

Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean

Once baked, remove the pumpkin bread from the oven and let it cool in the pan for 10 minutes

Then transfer it to a wire rack to cool completely before slicing
