Ingredients:
- 4 rainbow trout fillets
- 1/4 cup kosher salt
- 1/4 cup brown sugar
- 1 tablespoon black pepper
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon cayenne pepper
- Wood chips for smoking
Instructions:
In a bowl, mix kosher salt, brown sugar, black pepper, garlic powder, onion powder, and cayenne pepper to create a dry rub
Pat the rainbow trout fillets dry with paper towels and generously coat them with the dry rub mixture
Place the fillets in a covered container and refrigerate for at least 2 hours, allowing the flavors to penetrate the fish
Prepare your smoker with wood chips, bringing it to a temperature of 200-225F 93-107C
Place the marinated trout fillets on the smoker grates, ensuring they are not overcrowded
Smoke the rainbow trout for approximately 2-3 hours or until the internal temperature reaches 145F 63C
Once smoked, allow the trout to rest for a few minutes before serving
