Ingredients:
- 1 whole chicken about 4 pounds
- Salt and freshly ground black pepper
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 carrots, peeled and cut into chunks
- 4 potatoes, peeled and cut into chunks
- 1 small butternut squash, peeled and cut into chunks
- 4 cups chicken broth
- 1 bouquet garni a bundle of herbs such as thyme, parsley, and bay leaves, tied together with kitchen twine
Instructions:
Warm the oven up to 190C 375F
Sprinkle a lot of salt and pepper on the inside and outside of the chicken
A big pot that can go in the oven should have olive oil in it
It will take about 8 minutes to brown the chicken on all sides after you add it
Take the chicken out of the pot and set it aside
Put the chopped onion and garlic in the same pot
About 3 minutes of cooking will soften the food
Butternut squash, potatoes, and carrots should be added to the pot
Add pepper and salt
Use a stir to mix
Put the chicken back in the pot on top of the vegetables, breast side up
Add the bouquet garni to the pot with the chicken broth
Place the pot in an oven that has already been heated and cover it
For about an hour, or until the vegetables are soft and the chicken is cooked all the way through
Take the pot out of the oven and throw away the bouquet garni when its done
Add vegetables and broth to the plate with the chicken
