Grilled Parmesan Beer Chicken Calzones

These calzones are a delightful combination of grilled chicken marinated in beer and Parmesan cheese, mixed with sautéed vegetables, and enclosed in a crispy pizza dough. Perfect for a flavorful and satisfying meal

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1 cup beer your choice
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced green bell pepper
  • 1/4 cup diced red onion
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Pizza dough store-bought or homemade
  • Flour for dusting
  • 1 egg, beaten for egg wash

Instructions:

In a bowl, combine beer, grated Parmesan cheese, and minced garlic

Add the chicken breasts and marinate for at least 30 minutes

Preheat your grill to medium-high heat

Remove chicken from the marinade and season with oregano, salt, and pepper

Grill chicken until cooked through, about 6-8 minutes per side

Let it rest for a few minutes, then slice into thin strips

In a separate pan, saut the diced peppers and onions in olive oil until they begin to soften

Preheat your oven to 425F 220C

Roll out pizza dough on a floured surface and cut it into 4 equal portions

On one half of each dough portion, layer chicken slices, sauted vegetables, shredded mozzarella cheese, and some additional grated Parmesan cheese

Fold the other half of the dough over the filling and seal the edges by crimping with a fork

Place calzones on a baking sheet lined with parchment paper, brush the tops with beaten egg wash, and sprinkle with more Parmesan cheese

Bake in the preheated oven for 15-20 minutes, or until the calzones are golden brown and crispy
