Ingredients:
- 1 cup coconut oil
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 cups rolled oats
- 1 cup shredded coconut
- 1 1/2 cups semi-sweet chocolate chunks
Instructions:
Preheat your oven to 350F 175C
Line a baking sheet with parchment paper
In a large mixing bowl, cream together the coconut oil, brown sugar, and granulated sugar until smooth and fluffy
Add the eggs one at a time, mixing well after each addition
Stir in the vanilla extract
In a separate bowl, whisk together the all-purpose flour, baking soda, and salt
Gradually add this dry mixture to the wet ingredients, mixing until just combined
Fold in the rolled oats, shredded coconut, and chocolate chunks until evenly distributed in the cookie dough
Using a spoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart
Bake in the preheated oven for 10-12 minutes or until the edges of the cookies are lightly golden
Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
