Ingredients:
- 1 sheet ready-rolled puff pastry
- 2 medium fennel bulbs, thinly sliced
- 1 cup broad beans, blanched and peeled
- 100g goat cheese, crumbled
- 2 tbsp olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh thyme leaves for garnish
Instructions:
Warm the oven up to 400F 200C
Put the puff pastry sheet on a baking sheet that has been lined with parchment paper
Put olive oil in a pan and heat it over medium-low heat
Cut up some garlic and fennel and add them
It will take about 8 to 10 minutes of cooking until the fennel is soft and slightly caramelized
Spread the fennel that has been sauted out evenly on the puff pastry sheet
Spread goat cheese crumbles and blanched broad beans on top of the fennel layer
Add pepper and salt to taste
The pastry should be baked in a hot oven for 20 to 25 minutes, or until it is golden brown and crispy
Before serving, sprinkle with fresh thyme leaves
