Ingredients:
- 4 pounds pork shoulder, trimmed and cut into chunks
- 1 tablespoon oil
- 1 cup chicken broth
- 1 large onion, thinly sliced
- 4 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/2 teaspoon cayenne pepper optional for heat
- Salt and pepper to taste
- 1 cup barbecue sauce
- 1/4 cup apple cider vinegar
- 1/4 cup brown sugar
- 1 tablespoon Dijon mustard
- Buns, for serving
Instructions:
Season the pork chunks with smoked paprika, cumin, onion powder, garlic powder, cayenne pepper, salt, and pepper
Set the Instant Pot to Saute mode and heat oil
Brown the seasoned pork chunks on all sides
Add sliced onions and minced garlic, cooking until softened
Pour in chicken broth, deglazing the bottom of the pot to ensure nothing is stuck
In a bowl, mix barbecue sauce, apple cider vinegar, brown sugar, and Dijon mustard
Pour the mixture over the pork
Secure the Instant Pot lid, set to Manual or Pressure Cook mode, and cook on high pressure for 90 minutes
Allow natural pressure release for 15 minutes, then manually release any remaining pressure
Remove the pork, shred it using two forks, and return it to the Instant Pot, stirring to coat in the flavorful sauce
Serve the Instant Pot pulled pork on buns, creating delicious sandwiches for your family or guests
