Ingredients:
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 tablespoons olive oil
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and pepper, to taste
- 8 small flour tortillas
- 1 avocado, sliced
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions:
Get the oven ready by heating it up to 400F 200C
To make the peppers and onions taste great, mix them with olive oil, chili powder, cumin, paprika, garlic powder, salt, and pepper in a large bowl
Place the vegetables on a baking sheet that has been lined with parchment paper so that they are all in one layer
Put the vegetables in an oven that has already been heated and roast them for 20 to 25 minutes, stirring them every so often, until they are soft and slightly charred
Follow the directions on the package to warm the tortillas while the vegetables are roasting
Put some of the roasted vegetables on each tortilla to serve
Add sliced avocado on top and fresh cilantro on top of that
Comes with lime wedges
