Steak & Roasted Potato Salad

A hearty and flavorful salad featuring grilled steak, roasted potatoes, and a zesty garlic dressing, perfect for a satisfying meal.

Ingredients:

  • 2 large potatoes, diced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1 lb steak, grilled and sliced
  • 2 cups mixed greens
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup crumbled blue cheese
  • 1/4 cup chopped parsley
  • For Garlic Dressing:
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions:

Preheat oven to 400F 200C

Toss diced potatoes with olive oil, salt, and pepper on a baking sheet

Roast potatoes in the preheated oven for 25-30 minutes or until golden brown and crispy, flipping halfway through

In a small bowl, whisk together minced garlic, olive oil, balsamic vinegar, Dijon mustard, salt, and pepper to make the dressing

In a large bowl, combine mixed greens, cherry tomatoes, red onion, and crumbled blue cheese

Add the roasted potatoes and sliced steak to the salad

Drizzle the garlic dressing over the salad and toss gently to coat

Garnish with chopped parsley before serving
